Meet The Chef


Lacey Estrada
 
Chef Lacey Estrada hails from Central Valley, Northern California, where her love for cooking developed at a young age. Growing up in the region, she also gained experience in raising livestock, allowing her to understand the value of fresh, quality ingredients. This early exposure to food and agriculture sparked her passion for culinary arts, which she further honed by pursuing formal education at the Culinary Institute of America, Greystone in the Napa Valley. Here, she delved into the intricacies of cooking and learned the importance of using high-quality, locally-sourced produce. With her diverse background and education, Chef Estrada brings a unique perspective and skill set to her culinary endeavors. Her culinary journey has not only shaped her expertise, but has also instilled in her a deep appreciation for the connection between food, culture, and community.

Summer Italian Grill Menu
  • Heirloom Tomatoes- dressed in olive oil and balsamic reduction with basil.
  • Grilled Peaches and Nectarines- tossed with red onion and herbs
  • Fresh Burrata Cheese
  • Spinach Salad with Orzo, White Beans and lemon
  • Flatbread with Pesto, Red Peppers and Olives
  • Grilled Vegetables- zucchini, eggplant, onion,portobellos
  • Fresh Noodle Pasta with Red Sauce
  • Gnocchi in Cream Sauce with Chicken and Mushrooms

Appetizer Course:  This can be done in the style of either a cocktail hour, or a plated appetizer course.
Cocktail hour snacks (choose 2):
  • Charcuterie and Cheese and accompaniments
  • Eggplant Caponata Crostinis Mini Wild Mushroom and Goat Cheese Tarts
  • Grilled Flatbread with blue cheese, apples, caramelized onions
  • Wasabi Shrimp with scallions and avocado (wasabi flavor, not uber spicy)
Plated Appetizer Course (choose 1):
  • Portobello Polenta with truffle oil and Madeira Butter
  • Fancy Potato Pancakes with smoked salmon, horseradish crème fraiche and herbs
First Course (choose 1):
  • Famous Minestrone Soup
  • Arugula and mixed greens with persimmon, mandarin, walnuts and Burrata cheese in sweet shallot vinaigrette
  • Kale, Balsamic Reduction, cranberries, shaved almonds and Pecorino
Main Course (choose 1):
  • Maple Glazed, Grilled Pork Tenderloin or Thick Bone-in Chop (choose 1) with Duck fat crispy roasted potatoes, green beans with walnuts and braised rainbow chard
  • Braised Lamb Shanks (or shoulder) or Beef Short Ribs with fennel and orange; with White Bean puree, and sauteed Wild Mushroom medley
  • Grilled Beef (NY, Tenderloin) with Cranberry Zinfandel Sauce, Whipped Potatoes with a hint of gorgonzola and green beans with toasted almonds
